The new packaged food products containing insects as an ingredient

چکیده

This article focuses on a newly defined category of insect as food: packaged processed insects (PPIs). PPIs integrate dry (in pieces or in powder) food products such snacks, pasta, baked goods. have been the market for few years, and they are still far from being mainstream. The commercial challenges face, all which addressed this article, include production costs, certifications regulations, marketing communication, retail distribution consumer targeting. western preconception eating, has extensively covered existing literature, is also taken into account, but makers’ angle: how to deal with it when selling PPIs. Eleven PPI makers contributed by agreeing standardised interview protocol about their products. Their names summary information collected found Supplementary material S1.
